Wasted Food = Wasted Money

This session will cover ways to reduce food waste both in the front and the back of the house, including maximizing the shelf life of fresh produce, best practices for fresh made and scratch cooking, better portion control measures, share tables for students to deposit uneaten items, and using software to better plan and track meals.

Learn, Grow, Cook!

Learn, Grow, Cook is an educational initiative that incorporates nutrition education, gardening, and culinary skills. Learn – a hands-on interactive classroom with designated stations focusing on the MyPlate concept. Grow – it's a growing garden where students focus on the planting and harvesting of fruits, vegetables, and herbs. Cook – students get to cook the fruits, vegetables, and herbs harvested from the garden. Knife skills and food safety are also practiced with students.



Disaster Strikes! What Do I Expect? What Should I Do Next? How Do I Prepare?

Natural disasters can easily be considered some of the most terrifying events that a community might experience. They are unpredictable and can be absolutely devastating to us in terms of loss. The great state of Texas, despite its vast beauty, is subject to a handful of potential events such as hurricanes, tornados, and flooding. The unpredictability of such occurrences requires us to be prepared in more ways than one. We would like to bring attention to three unique stories by professional food service directors who have recently been forced to overcome in times of tragedy. What do you do if your kitchen is in total disarray or you are locked out? What do you do if your students have no place to go or if you have to feed the neighboring district's students in addition to your own? Each of their stories and situation will shed a unique light on how you can be better equipped with necessary solutions to handle the unthinkable.

Director of Commodity Operations for TDA Food and Nutrition would like to provide an update regarding USDA Foods for the National School Lunch Program. Updates will include changes in staff, upcoming changes to TX-UNPS, and changes in TDA's processes. Additionally, updates will be provided concerning new outreach efforts, foods available, and general information concerning entitlement and inventory.
