PRIMARY PURPOSE:

To coordinate all aspects of menu planning including production records, cost analysis, and product acceptability.  Assist director to ensure an efficient, productive, customer service oriented program that fulfills regulatory requirements, meets the nutritional requirements for students, promotes the development of sound nutritional practices, and maintains a safe, sanitary and inviting atmosphere.

 

QUALIFICATIONS:

            Minimum Education/Certifications:

·         Degree in foods, nutrition, dietetics, or business administration

·         Registered Dietitian

·         TASN and SNA member

 

            Special Knowledge/Skills:

·         Knowledge of applicable Federal and State laws

·         Knowledge of menu planning, food procurement, and food preparation for institutional, high-volume food service delivery

·         Computer literate (Microsoft Office, mainframe applications)

·         Ability to train and communicate effectively

·         Strong organizational, communication and interpersonal skills

 

Minimum Work Experience:

·         Three years experience in food service management, preferably in school food service.

 

MAJOR RESPONSIBILITIES AND DUTIES:

 

OPERATION SERVICES

·         Plans breakfast and lunch menus  in compliance with Traditional Meal pattern guidelines; plans therapeutic menus for special dietary needs as required

·         Plans snack menu for after school program

·         Maintains menu planning database to ensure ingredients and recipes are accurate and correspond with the food buying guide, CN labels/product specification sheets and HACCP standard operating procedures

 

ADMINISTRATION

·         Communicates with the department bookkeeper when new menu items are added to the menu to ensure accuracy in inventory

·         Ensures current Child Nutrition (CN) labels and/or nutrition statements are on file electronically

·         Trains employees on reimbursable meals, food production records, nutrition education and other pertinent topics

·         Maintains records and other documents as required

 

STUDENT MANAGEMENT

·         Ensure that services provided by this position are supportive of the educational mission of the district and the attainment of the district, division, and the campus strategic goals.

·         Creates nutrition education material for students, conducts nutrition education classes

·         Provides nutrition education materials for PE and health teachers to distribute and teach to students

·         Creates the take-home menu for students

 

ORGANIZATIONAL CLIMATE

·         Ensure security measures are in place and utilized to protect and account for food, supplies, cash and equipment

·         Conducts student and parent surveys

 

SCHOOL/ORGANIZATIONAL IMPROVEMENTS 

·         Participates in the School Coordinated Health Advisory Committee, Green Team and other committees as necessary

·         Visits school cafeterias on a weekly basis to review product quality, recipe integrity, food quality and presentation and conduct on-site training with staff

·         Facilitates and maintains district Wellness Policy per USDA regulations

·         Introduces new menu items, test recipes and conduct student taste testing

 

PROFESSIONAL GROWTH AND DEVELOPMENT

·         Develops and upgrades professional skills and knowledge appropriate to the job assignment

·         Attends training sessions, food shows and stays current on all local, state and federal policies, this includes workshops and webinars presented by SNA, TASN, USDA, ADA and Region XI

·         Facilitates and encourage effective communication with staff, community, media and the Board of Trustees

·         Demonstrates support for the district’s policies, regulations, procedures and objectives

PRIMARY PURPOSE: Responsible for creating all school menus in compliance with federal and state requirements and regulations, performing nutritional analysis on all school menus and foods as needed and providing nutritional support and expertise in the area of student special diets and other department needs. 
 
QUALIFICATIONS:
Education/Certification:
                                    Bachelor of Science in Food and Nutrition or in Restaurant, Hotel, and Institutional Management
Certification as a Registered/Licensed Dietitian required
 
Special Knowledge/Skills:
Extensive knowledge of federal school meal programs and nutritional requirements for students and adults
Knowledge of quantity food production methods and procedures
                        Completion of a credited sanitation course and maintain certification
Competence in adult and student education, presentation techniques, training materials development and evaluation

Experience:

MAJOR RESPONSIBILITIES AND DUTIES:
·         Develop cost-effective school menus in accordance with USDA requirements and federal and state regulations.
·         Oversee the development of all menus, production plans and records in accordance with USDA requirements and federal and state regulations.
·         Oversee the distribution of all menus, production plans, records and related materials.
·         Develop menus, recipes, production plans and records for special serving days or events (holiday menus, HUSSC, After School Snack Program, Summer Feeding Program, etc.).
·         Administer all functions of nutrition and production through current software system (Cybersoft/Primero) to include entering and updating recipes so that they remain accurate and current.
·         Assist with analyzing quotes and making recommendations regarding awarding of contracts based on department needs.
·         Oversee USDA commodity inventory at district warehouse and plan menus to utilize commodities in a timely manner; assist with the management of USDA donated commodities and commodity processing.
·         Conduct nutrient analysis of all school meals and menus; evaluate nutritional information on food bids.
·         Authorize substitutions made by vendors on orders.
·         Review and process all documentation regarding student nutritional services, especially special diets and food allergies, in a timely manner. Disseminate special diet information as needed to Food Service Manager, school nurse and parents.
·         Act as a liaison between the Food Service Department and District Special Services during ARD conferences.
·         Coordinate testing and development of new recipes for quality, yield and cost; assist with writing bid specifications for products needed.
·         Organize testing and evaluating of food product samples submitted by sales representatives to determine acceptability and maintain a file of test results to make effective recommendations for purchase.
·         Develop and maintain appropriate records such as vendor, commodity and bid lists and CN label filing system.
·         Maintain the Food Service web-site with up-to-date nutrition information and other areas as assigned.
·         Assist with Manager Trainee Program by organizing and teaching lessons as scheduled.
·         Organize and oversee taste testing to various groups (student, F &NS staff or District staff, etc.) to obtain customer participation information (menu item feedback and menu item suggestions) and make recommendations based on input.
·         Attend and participate in all monthly manager and safety meetings as scheduled; participate in development of in-service training programs for all Food Service staff; provide training as assigned.
·         Attend workshops, in and out of District staff development sessions, and other continuing education courses that will develop and maintain professional credentials for this position.
·         Keep abreast of supply sources and new product development by meeting with vendors, attending food shows and participating in local and state professional associations.
·         Follow all rules, regulations, and policies of Irving ISD and the National School Lunch and Breakfast programs.
·         Perform frequent school site visitation to observe deliveries, food quality and customer satisfaction.
·         Manage, implement and communicate nutrition education activities and information through Food Service staff to students, parents, campus staff, and administrators as needed to create awareness of importance of good nutrition as related to overall good health.

Job Description

Texas Juvenile Justice Department is seeking a Nutrition Services Specialist to performs complex (journey-level) work assisting the agency’s Nutrition Services Manager in the planning and development, implementation, and monitoring of the agency’s nutrition and food service program that is designed to sustain and improve the health of youth through attention to their dietary needs while they are assigned to the agency’s secure institutions and halfway house facilities throughout the State of Texas. May train others. Works under general supervision, with moderate latitude for the use of initiative and independent judgment. Overnight travel required. May be required to work overtime or be on-call. 

 

REQUIREMENTS:

Bachelor’s degree with major course work in dietetics, food and nutrition, food systems management, food science, home economics, or a related field.  Three (3) years of full-time wage earning experience in dietitian or nutritionist work.  Completed course hours of graduate study may be substituted for up to two (2) years of experience on a basis of 12 graduate course hours for one year of experience. The degree and graduate course hours must be from an accredited college or university.

Must be a Registered Dietitian (R.D.) with the Commission on Dietetic Registration, the credentialing agency for the Academy of Nutrition and Dietetics.  Continued employment is based upon maintaining current credentials.

Preferences:
- Licensed Dietitian (L.D.) with the Texas State Board of Examiners of Dietitians; and/or
- Supervisory experience in food systems management/operations or as a nutrition/dietitian consultant; and/or
- Experience in compliance monitoring, the National School Lunch and School Breakfast Program, juvenile corrections, and software created for the purpose of planning and analyzing menus.
